FIELD: food industry.

SUBSTANCE: method involves epuration of brew in the epurating zone of the brew-epuration column and digestion of alcohol from the brew in its digestion zone. The digestion and the epurating zones of this column are separated by a horizontal partition equipped with a downpipe but having no holes for penetration of vapour which is discharged from the vapour space of the digestion zone upper plate through a side nipple and delivered into the additional brew reheater where brew is reheated with vapour partial condensation heat. Residual vapour is returned from the brew reheater into the vapour space above the partition and the epurating zone is heated with it; reflux is delivered into the liquid phase of the upper plate of the epuration column distillation part. Brew distillate is cleared of methanol, acetic aldehyde and other head impurities by way of bleeding fractions from the brew-epuration column condenser, the carbon dioxide separator condenser and the impure cuts alcohol trap which, together with fractions from the rectification column condensers, the final purification column and the pure cuts alcohol trap, are delivered onto the supply plate of the column for concentration of methanol and head impurities. The head impurities concentrate fraction is bled from this column condenser and discharged from the brew rectification installation while still liquor is returned into the brew. Brew distillate epuration is performed with delivery of hydraulic selection water onto the epuration column upper plate having a distillation, a digestion and a concentration parts. The brew distillate flow is reduced while fusel alcohol fraction from the rectification column is delivered onto the distillate column supply plate for better digestion and concentration of head and intermediate impurities in the epuration column fraction from the condenser whereof is directed, together with vapour condensate from the fusel condenser, into the decantator for delamination into two liquid phases. The lower water stratum of liquid from the decantator and hydraulic selection water are delivered onto the distillate column upper plate while vapour condensate from the distillate column condenser is joined with the upper stratum of liquid from the decantator and discharged from the brew rectification system as the head and intermediate impurities fraction. From the liquid phase of the lower plates of the distillate column digestion part one bleeds the fraction of ethanol cleared of impurities which is directed onto the upper plate of the epuration column distillation part.

EFFECT: invention enables production of rectified alcohol of improved quality at reduced cost.
