FIELD: food industry.
SUBSTANCE: invention relates to food industry and is intended for production of food products, in particular chips from apples. As a processed raw materials, apples of sweet and sour sorts are used, which are washed, ground into slices with a thickness of 1.9–2.3 mm, dried by convection drying at a temperature of 80–85 °C for 10–15 minutes, fried in oil at a temperature of 170–180 °C for 2–3 minutes and processed with flavor additives.
EFFECT: invention allows to obtain apple chips with a traditional consistency of "crispy", pronounced apple flavor and a low oil content.
