SUBSTANCE: invention relates to biochemistry and the dairy industry. Hold the oil mixture for 20 hours, mix 20 % cream with the separated oil extract in a 4:1 weight ratio and mix the mixture to obtain buttermilk.
EFFECT: invention provides an expansion of the range of products of a given composition and properties by producing buttermilk of increased food, biological value and storage capacity, as well as with improved organoleptic indicators for taste and color.
