SUBSTANCE: group of inventions relates to biochemistry. Proposed are a method for microbial fermentation of sugary substrates and a means for selective production of alcohol. Said method comprises introducing hydrogen into a fungi or bacteria-related microorganism where the microorganism is in suspension in a fermented wort or in an immobilized layer. Moreover, said fermented wort or immobilized layer contain sugars and micronutrients, and microbial fermentation is carried out in a bioreactor. In the method, the means for selective production of alcohol are hydrogen in an atomic, ionic or gaseous state or a mixture thereof.
EFFECT: inventions provide an increase in the yield of alcohol in the fermentation reaction and a decrease in the release of carbon dioxide.
