SUBSTANCE: disclosed is a method of extracting volatile fatty acids (VFA) produced by microorganisms in a fermentation reactor. method includes the selection of an extraction agent that is not soluble in the fermentation medium and retains the ability of microorganisms to produce VFA, bring the selected extraction agent into contact with the fermentation medium without interrupting the fermentation and extracting the extracted VFA from the fermentation reactor using the extraction means at pH below 4.5.
EFFECT: invention allows to optimize the fermentation yield, carry out continuous fermentation and approach non-waste production.
