SUBSTANCE: invention relates to the food industry. Composition of the dough for the production of wheat bread with mushrooms contains wheat flour baking, yeast baked pressed, salt, Chaga mushroom, dried at a temperature of 80–85 °C to a moisture content of 10–12 % and ground to a particle size of 0.5–1.0 mcm, drinking water for dough moisturizing to 43–44 %. Starting components are used in the following ratio, wt. %: wheat flour of the first grade 61.4–62.9; yeast bakery pressed 1.4–1.6; common salt 1.3–1.5; Chaga mushroom 2–4; drinking water – by calculation.

EFFECT: invention allows to increase the nutritional and biological value of the product, as well as to improve its organoleptic characteristics.
