FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to confectionary industry. Jelly marmalade of prophylactic use is proposed, including treacle, gelling agent in the form of gelatin, food acid, sugar, biologically active component, with the gelling agent additionally containing dietary fibers Camecel in relation to gelatin 1:10, as a biologically active component contains a cola nut extract obtained by crushing fruit with subsequent grinding on a roller machine to a degree of grinding of 90 % < 40 mcm and evaporating the extract to a humidity of 20 % as food acid contains a mixture of citric and malic acids in a ratio of 1:0.5, with the following ratio of the original components, %: molasses 29–34; food fibers Camecel and gelatin 19–24; extract of cola nut 10–14; a mixture of citric and malic acids 1.3–1.5; sugar 31.5–35.7.
EFFECT: invention provides increase in the food, biological value of jelly marmalade, as well as the enhancement of prophylactic properties of the product.
