FIELD: food industry.

SUBSTANCE: invention relates to the dairy industry and can be used in the production of dry mare's milk. This method involves raw materials being accepted, evaluated, weighed, cleaned, cooled to a temperature of 4–8 °C, and stored, after that pasteurization of milk at a temperature not lower than 60 °C for 30 min is performed, it is followed by thickening and drying. At the same time milk is used with acidity not higher than 8 °T, density not lower than 1,030 kg/m3. Pasteurization is carried out at a temperature not lower than 60 °C for 30 minutes, and the condensation is carried out in a vacuum evaporation apparatus to a mass fraction of dry substances of at least 44 %, and the boiling point of milk during the whole condensation process is 50–60 °C. Also, the temperature of condensed mare's milk entering the dryer is maintained between 50 and 60 °C. Before feeding condensed milk to the dryer, the air temperature at the outlet of the dryer must be between 90 and 110 °C. Drying is carried out at the following parameters: the temperature of the air entering the dryer, 187 °C, the condensate temperature not more than 80 °C, the temperature of the air leaving the dryer, 93 °C, with a mass fraction of moisture in the product of 4 % and a vacuum in the drying chamber from 50 to 100 Pa. Further, the finished product has a mass fraction of protein 15 % and acidity 7–11 °T.

EFFECT: invention allows to improve the quality of dry mare's milk.
