SUBSTANCE: invention can be used in the production of powdered mare's milk in the conditions of a single peasant farm. A method of producing dry mare's milk is proposed. Raw mare's milk is purified within 2 hours after milking the mares using a mobile filtration unit. Milk is passed through UVMILK ULTRA SIMPLE 0.5 ultrafine filter made of food-grade polypropylene under a pressure of 0.5 bar into graduated thick glass containers. From each container, a thin layer of milk is placed on a separate tray of a low-temperature blast freezing cabinet RS 10.6, pallets with purified raw mare's milk are placed inside the cabinet for 5–6 hours, pallets with frozen milk are removed from the low-temperature blast freezing cabinet and placed on the shelves with an SB2 sublimator, after 20 minutes of the sublimation drying process inside the sublimator, the pressure is set to 85 Pa, the desublimation temperature is 44–45°C, temperature on shelves 1–6°C, after 26 hours, inert gas nitrogen is pumped into the sublimator, the freeze-dried milk is crushed by grinding to a fine fraction of 3–4 microns in size, packaged in consumer packaging of 15 g of dry mare's milk, bags of milk are packed in transport containers — corrugated cardboard boxes, which placed in aluminum boxes and treated with gamma radiation on an RTU-3000 installation as a result of the movement of a PTK-80/150 type conveyor at a speed of 0.1 m/s into the irradiation chamber with the passage of products along the sides of the irradiator planes, treatment is carried out with doses of gamma radiation 1.5–2.5 kGy with the “Cycle Time” parameter set to 5 min 20 s–5 min 40 s, the control process is carried out using an automated control system (ACS).

EFFECT: invention makes it possible to optimize the technological parameters of drying raw mare's milk.
