SUBSTANCE: present invention relates to an outlet valve for institutional kitchen kettle (1) and a method for using the outlet valve. Piston means of the outlet valve is piston casing (9) arranged in cylinder pipe (11) and configured to receive elongated piston means (6) coaxial with the cylinder pipe, end (6') of the piston means being movable into a position closing reduction ring (4) opening (5) tightly. Cylinder chamber (20) is formed on the inner part of cylinder pipe (11), which chamber extends from bottom opening (2) to upper edge of piston casing (9). Diameter (E) of piston means (6) over the entire axial length of cylinder chamber (20) is smaller than diameter (C) of inner surface (11') of cylinder chamber (20) by such a value that, between cylinder chamber (20) and piston means (6), there remains slot (7) of an annular cross-section along the full length of cylinder chamber (20), wherein the slot is open at its first end to bottom opening (2) and at its second end to outlet pipe (3), allowing the washing liquid to be supplied at a certain minimum flow rate through bottom opening (2) of outlet pipe (3) for cleaning in place (CIP).

EFFECT: aim of the invention is to eliminate this disadvantage by providing the type of valve arrangement for dosing the bottom opening of an institutional kitchen kettle, which can be cleaned by CIP cleaning, thus ensuring not only even cooking of the food in the institutional kitchen kettle, but also the fulfilment of hygiene requirements during the use and emptying of the institutional kitchen kettle.
