FIELD: food industry.
SUBSTANCE: invention relates to the dairy industry and can be used for the preparation of calcium-containing milk protein concentrates (co-precipitates). Method involves cow or goat milk cleaning, heating and thermo-calcium coagulation of proteins with calcium chloride. At that, when using cow's milk, calcium chloride is added in the amount of 1.5 g/l, and with goat's milk is 1.25 g/l. Then cooling down is carried out, partial removal of the serum, introduction of a ferment of microorganisms of the species Lactobacillus helveticus strain H17-18, fermentation, self-pressing, grinding of the clog, lyophilic drying, packaging and storage.
EFFECT: obtained milk-protein concentrate has an increased content and assimilation of calcium and an extended shelf life.
