FIELD: food industry.

SUBSTANCE: present invention relates to the field of food processing and raw materials from commercial species of wild birds, fish and animals (hereinafter referred to as commercial species). Method of reducing the content of DDT and its metabolites in food raw materials from commercial species includes the grinding of raw materials to a fraction of 3–3.5 cm, the subsequent extraction of these substances in the lipid phase at room temperature for 30 minutes – 1 hour, separation of the lipid phase, its heat cooking in the aqueous or lipid phase at 100–180 °C for 2 hours, followed by removal of the secreted lipid fraction and separation of the resulting product.

EFFECT: proposed method of reducing the content of DDT and its metabolites in raw materials from commercial species allows extracting 78–89 % of DDT and its metabolites relative to the original sample and improving the quality of food commercial raw materials.
