FIELD: food industry.

SUBSTANCE: invention relates to the food industry. Dietary fiber from vegetable raw materials production method, including the raw materials grinding, chemical treatment, bleaching, grinding, the finished product drying and packaging, at that, as the of raw materials source the sugar production dry beet chips are used, which are previously directed to the pneumatic sorting machine, cleaned of impurities, chopped and fine pulp, further cleaned of metal impurities with magnets. Then it is directed for washing in at least one bubble bath at the water temperature of 10 to 70 °C, next soaking in water with the irrigating modulus range from 1/8 to 1/50 at a temperature from 5 to 50 °C, adding the reagent to the concentration in the reaction mixture of 0.5–5 g/l, intensively stirring for 30–180 minutes. Resulting suspension solution is neutralized to the pH of 6.5–8 using the neutralizing agent, then bleaching with the bleaching agent, ensuring the active oxygen smooth formation for 1–24 hours at a temperature of 18–55 °C in the alkaline medium with the pH range of 8.5–13, then the bleached semi-finished product is washed with water at a temperature of 10–60 °C for not more than 20 minutes, treated with the live steam with a temperature of 100–110 °C. Obtained semi-finished product is wringed out with the screw press to the moisture content of 60–80 % and directed for drying with duration of 1–20 minutes with the heat agent temperature of 60–170 °C, the dried product is crushed and sorted by size fractions.

EFFECT: invention allows to increase the product water-holding capacity, to reduce the content of impurities.
