FIELD: food industry.
SUBSTANCE: method for production of food fibres of vegetable raw materials involves crushing starting material, chemical treatment, extraction, crushing, drying and packing of ready product. Feedstock used is dry cossettes waste from sugar production, pulp or dry granulated sugar production waste, or wet waste bagasse from sugar production, which was previously washed with an alkaline solution of pH 7.5-13.5 at 20-45°C in hydronic ratio 1:9-1:15, then drained by centrifugation at 1500-2000 separation factor for 5-10 minutes, ground to particulate size of 3-5 mm and washed with pure water at a ratio of 1:2-1:4 re-centrifuged at 1500-2000 separation factor for 5-10 minutes, clarified water containing atomic oxygen, oxygen, ozone total concentration of at least 35 mg/l, at a temperature of not more than 20°C and pH>7 at a ratio of 1:2-1:4, and then treated with ozone in an amount of 0.01-0.5% based on dry matter by successive simultaneous bubbling and stirring for 15-30 minutes, with stirring extracts 15-30 minutes of bubbling and simultaneous stirring for 10-20 minutes exposure under stirring for 10-20 minutes, then inactivated by singlet oxygen by adding sodium thiosulphate in an amount of 1.05 equivalent of residual active oxygen is drained by centrifugation at 1500-2000 separation factor for 5-10 minutes, washed with drinking water in ratio 1:2-1:4, is dispersed to a particle size 0.05-0.4 mm, dehydrated by centrifugation at 2000-3000 separation factor for 10-20 minutes, dried with hot air at a temperature of 90-180°C to a residual moisture content of 5-10% and packed in containers weighing capacity 0.25-250 kg.
EFFECT: invention increases stability of quality and properties of finished products, as well as manufacture narrow range of dimension and stable structure of food fibres.
