SUBSTANCE: invention relates to the tea industry. The method for producing tea from aspen leaves is as follows. The raw material is wilted during the formation of a layer of 80-100 mm with forced air blowing with a temperature of 15-20°C to a relative humidity of 55-60% and crushed. Fermented in aspen or linden boxes with a semi-finished product layer thickness of 15-25 mm and at a temperature of 35-40°C for 14-16 hours until a characteristic light sweetish-fruity aroma appears and the leaf color changes to a dark brown color. Dried at a temperature of 55-60°C for 5-7 hours to a relative humidity of 8-10%.
EFFECT: invention provides an expansion of the range of beverages containing a certain amount of biologically active substances produced from plant materials of phenolic nature - phenolic glycosides, flavanoids, tannins.
