FIELD: food industry.
SUBSTANCE: invention relates to alcohol industry. Method of producing distillate includes mixing dried Jerusalem artichoke with water, acidifying the wort, introduction of exo-inulinase and fermentation activator and wort fermentation, characterized in that the fermentation is carried out using dry alcohol yeast, added in amount of 150–200 mg/100 cm3, then the separation of fermented wort into two parts in a volume ratio of 3:1 is carried out, one-time distillation of a part of a smaller volume with obtaining a return distillate, which is then introduced into a part of the fermented wort of a larger volume to increase the concentration by 2.0–2.5 % by volume, one-time distillation of the latter to obtain distillate from inulin-containing raw materials.
EFFECT: method allows to increase the distillate yield by 1½–2 % and improve its organoleptic characteristics.
