SUBSTANCE: method involves mixing inulin-containing raw material with water, introduction of enzyme preparations of a saccharifying action and proteolytic action, saccharification, fermentation of saccharified wort using dry distiller's yeast and single distillation to obtain a distillate. Inulin-containing raw material used is dried girasol.

EFFECT: invention increases output of distillate per unit of raw material, reduces power consumption at stage of obtaining saccharified wort, avoids use of expensive enzyme preparations of diluent action and intensifies fermentation process.
