FIELD: food industry.
SUBSTANCE: invention relates to winemaking industry. Method of producing distillate involves mixing the first part of the raw material with water at the water duty of 1:(4.0–6.0), introduction of enzyme diluting agents with mesophilic α-amylase in amount of 0.5–1.0 units of AC/g of conditional starch and hemicellulase action in amount of 0.1-0.2 units of CC/g of raw materials, exposure of the resulting mixture at the temperature of 50–55 °C for 30–60 minutes, temperature rise to 70–75 °C and the introduction of the second part of the raw materials, holding the resulting mass at this temperature for 60 minutes, temperature rise to 95–98 °C and soaking for 30 minutes, cooling the resulting mass, introduction of enzyme preparations of a saccharifying action and proteolytic action into it, saccharification, cooling, the introduction of dry alcoholic yeast, fermentation, single distillation to obtain distillate, at that, recyclable bakery production waste, namely, rye-wheat and wheat bread, taken in the ratio from 1:1 to 1:2, respectively, is used as raw material, first part of the raw material is rye-wheat bread, the second is wheat bread.
EFFECT: invention allows to reduce energy costs, reduce the duration of preparation of raw materials for distillation and increase the yield of high-quality distillate per unit of raw materials.
