FIELD: food industry.

SUBSTANCE: method of preparation of food concentrates-semi-finished flour products includes the preparation of flour and prescription components, their mixing, packing and packaging. Flour component is prepared by mixing wheat flour of the first grade with a combined protein-carbohydrate soybean and citrus flour at a ratio of 4:1, or soy cinnamon flour at a ratio of 5:1, or soy ginger flour at a ratio of 6:1, respectively. Combined protein-carbohydrate soya-citrus, soya-cinnamon and soya-ginger flour is produced by mixing equal quantities of swollen soybean seeds and chopped fresh peel of lemons, or crushed cinnamon sticks, or chopped fresh ginger root, grinding them in water with heating to obtain a finely dispersed suspension with simultaneous extraction of soluble substances, coagulation of protein and other substances in the resulting extract with the formation of serum and protein-carbohydrate-vitamin residue, which is dried and ground into flour.

EFFECT: invention allows to obtain a product of increased nutritional and biological value due to an increase in the content of proteins and dietary fibres and enrichment with vitamins and minerals.
