FIELD: food industry.

SUBSTANCE: method is proposed for production of candied fruits and vegetables, including preparation of raw materials, removal of non-edible parts, cutting, separation of raw material from liquid phase and drying, wherein cutting of vegetables and fruits is performed to produce pieces of regular shape with sides with width of 5–8 mm and length of 15–30 mm, after cutting, produced mass is washed with running water, poured with hot grape pekmez with dry substances content of not less than 70 %, brought to the boiling and boiled during 3–5 minutes, then candying for 24 hours at temperature of 22–24 °C for leveling concentrations between pekmez and raw materials, addition to boiling, boiling and candying is repeated 2 more times, then produced succades are separated from grape pekmez, then succades are dried at a temperature of not more than 30 °C to residual moisture content of 17–18 % to obtain end product. Task of the invention is solved in the vegetable and fruit succades production method involving raw materials preparation, the non-edible parts removal, cutting, raw material separation from the liquid phase and drying.

EFFECT: invention enables to use secondary raw materials for preservation industry, wider range of healthy food products without sugar, and improvement of organoleptical properties of succades with a unique balanced combination of appearance and consistence, taste and aroma, increased nutritive value.
