FIELD: food industry.
SUBSTANCE: method is proposed for preparation of succades from jujube, envisaging washing of jujube fruits, dehydration and stinging, cutting of fruits along 4 parts. Bringing the fructose-glucose syrup to a boiling point, adding cinnamon into the syrup and boiling out till dry substances content is 65–70 %. Pouring jujube fruits with syrup, bringing to boiling, heating for 25–30 minutes, holding for 6 hours at 25–30 °C. Boiling and cooking over low heat for 20–30 minutes. Removal of excess syrup from cooked jujube fruits, drying of ready succades fruits at temperature of 15–25 °C.
EFFECT: invention provides a product with high consumer and preventive properties.
