FIELD: dehydrated products.
SUBSTANCE: invention relates to dehydrated products made from fruit and vegetable raw materials with the addition of berries, and can be used in dietary and functional nutrition. Snacks from fruit and vegetable raw materials with the addition of berries for functional nutrition are proposed, which are made from orange fruits, vegetables - pumpkins, carrots - and blackcurrant berries by sorting, washing, cutting, mixing, shaping blanks and drying in an IFC dryer (infrared dryer), with orange fruits are crushed in the range from 1 mm to 3 mm, blackcurrant berries are used as a whole or crushed in the range from 0.075 mm to 1 mm, vegetables - pumpkin and carrots - are crushed in the range from 1.5 mm to 3 mm, after this is mixed to obtain a homogeneous mixture, round blanks with a diameter of 6 cm are formed and dehydrated once in an IFC dryer for 8-9 hours at a temperature of 45-60°C to a residual moisture content of 5-10%, while the following ratio of the initial components, wt.%: pumpkin 24-48; carrots 29-48; orange 15-20; blackcurrant 8-9.
EFFECT: invention provides an increase in the nutritional value of the manufactured product and an expansion of the range of multicomponent snacks for functional nutrition with maximum preservation of the natural potential of raw materials.
