SUBSTANCE: method involves breaking and separating pulp from crust, cleaning crust from thin skin, separating seeds, pulping, dividing into solid and liquid phases, and its heating up to 85-90 C, and ageing at this temperature for 1-3 min, cooling up to 30-35 C, clarifying; sterilizing and steaming under vacuum up to 70% by mass of dry substances; boiling cleaned crust in concentrate up to 74-76% of dry substances in it by mass; separating crust from liquid phase and its drying; filtrating remaining liquid phase from hard suspended matters and its packing by heat filling.
