FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used in public catering for sandwich, sushi, rolls production, culinary products from fish, rice and vegetables. Method involves washing of white fine-grained rice, its cooking, infusion, addition of rice vinegar, stirring and cooling of the mixture, and formation of the obtained sushi sandwich in rhomb shape. At the same time a portion of cooked rice is placed in the center of the nori sheet, 1/3 of the norm is laid; crushed Mizuna leaves are laid on top; after that, milled, specially prepared fish fillet is put on it; horseradish is put on it; one puts the filling with the remaining rice on top with folding the nori with an envelope. Fish fillet is represented by salmon fillet. Before greasing fish fillet with wasabi horseradish, fish is marinated in a maturing brine at 4 °C for 24 hours. Ripening brine is prepared for 1 kg of fish 1 l of water, treated on an industrial processor for cavitation disintegration of liquid media and water "Hielscher Ultrasound Technology UP", which is added with 90 g of salt, 3 g gluconic-δ-lactone. Then components are mixed until complete dissolution and filleted with fish fillet.
EFFECT: invention usage will allow to prepare sushi sandwich with high quality and safety organoleptic indices.
