FIELD: fishing industry.
SUBSTANCE: invention relates to a technology for the manufacture of ready-to-eat fish culinary products from blue catfish meat. The method for producing fish paste from blue catfish includes preparation of fish raw materials and ingredients, mixing, fine grinding to a homogeneous consistency, packaging. Moreover, the prepared blue catfish fillet with skin is boiled in water at a ratio of fish: water 1: 3 until cooked, cooled to a temperature not higher than +30°C, the meat is separated from the skin, finely chopped and mixed with previously separately chopped and blanched steam for 10-15 minutes and then pureed fresh carrots and fresh sweet pepper, chopped and sautéed in vegetable oil. Then it is mixed with fresh puréed onions, fresh minced garlic, chopped parsley. Then add curd cheese, spicy seasoning such as horseradish, table salt, ground black pepper, white sea kelp in powder are added. Paste is prepared with a certain ratio of prescription ingredients.
EFFECT: making a new culinary product – blue catfish fish paste enriched with bioavailable iodine.
