FIELD: meat industry.
SUBSTANCE: invention relates to meat industry and aims at acceleration of meat autolysis in slaughtered animals under field conditions. Method for electric stimulation of fresh meat involves electric treatment of all extremities of carcasses of slaughter animals at the stage of bleeding. Cattle is treated with voltage 230 V, frequency 40 Hz, current intensity 5 A, duration of treatment with current of rear extremities 2 min, front extremities 2 min, neck 6 min with pause between pulses 0.5–1.8 s. Pork is treated with voltage 110 V, frequency 35 Hz, current intensity 5A, duration of treatment with current of rear extremities 0.5 min, front extremities 0.5 min, neck 1 min with pause between pulses 0.6–2 s. Small cattle are treated with voltage 36 V, frequency 30 Hz, current intensity 5 A, duration of treatment with current of rear extremities 0.25 min, front extremities 0.25 min, neck 0.5 min with interval between pulses 1.2–2 s.
EFFECT: accelerated transformation of anatomical structures and physiological processes in carcasses of slaughter animals, improved consistency and meat tenderness, reduced pH of medium, shearing forces, tear force and increased microbiological stability during storage in field conditions.
