FIELD: food industry. SUBSTANCE: method involves using voltage from a pulse genarator after bleeding out between the nech skin area and lower limbs. Pulses differing in polarity have frequency 10 to 100 Hz and duration 2 to 30 sec. The total time of electric stimulation is 1 to 5 min, and maximum voltage is 30 to 60V for beef carcasses and8.5 to 30V for sheep or pig carcasses. The device is provided with a voltage control unit, voltage pulse former, and pulse package former. The device has a conveyor with a system of grounding and nullifying electrodes for lower limbs and a system of movable electrodes for carcasses.
