FIELD: chemistry.
SUBSTANCE: distilled cognac distillate with volume fraction of ethyl alcohol 62–70 % is maintained in contact with oak wood before the expiry of the specified period of exposure. 3–12 months before the expiration of this period, the distillate is poured into a separate container, ehalisation and blending are carried out by introduction into the egalised distillate of extractive components of oak wood and sugar-containing substances and addition or without addition of softened water with provision in the obtained mixture of volume fraction of ethyl alcohol 50–56 % and mass concentration of given extract 1.0–3.0 g/dm3. Pre-extractive components of oak wood are treated with oxidants, settled until clarification and removed from the residue. Blend mixture is returned for further curing, removed from curing, brought with softened water volume fraction of ethyl alcohol to 40–45 %, followed by after-rest and treatment of blending to ensure bottling resistance with subsequent pouring of cognac into the container.
EFFECT: invention ensures reduction of duration of after-rest, assimilation of volatile impurities of distillate with extractive components of oak wood, sugar-containing substances and products of their decomposition at the stage of holding, optimum conditions of oxidising, hydrolytic and other processes with formation of aromatic aldehydes, gallic acid and monosaccharides, which indicate efficiency of blending maturing.
