FIELD: food industry.
SUBSTANCE: group of inventions relates to food industry, in particular, to dairy industry. Milk product production method envisages ultrafiltration (UF1) of first liquid composition containing defatted milk of animals with 70–90 wt% casein and 10–30 wt% whey proteins in terms of total protein, through a first ultrafiltration membrane, having molecular weight cutoff 2.5–25 kDa, using a volume concentration factor of 1.5–6 to obtain retentate (UFR1) and permeate (UFP1). Ultrafiltration (UF2) of second liquid composition, containing sweet whey and/or acidic whey, through second ultrafiltration membrane, having molecular weight cutoff of 2.5–25 kDa, using bulk concentration factor 2–15 to obtain retentate (UFR2) and permeate (UFP2). Thereafter mixed UF-retentate first liquid composition with UF-retentate second liquid composition to obtain mixture UF-retentates. Also disclosed is version of method implementation and modular system for production of milk product according to invention.
EFFECT: group of inventions provides reduced losses of lactose during treatment of skimmed milk and whey, output of lactose more than 90 %, as well as production of a product balanced on nutritive value.
