SUBSTANCE: invention relates to a method and system for production of a dry milk mixture. Method for production of a dry milk mixture involves the following stages: (ai) ultrafiltration (UV) composition based on defatted animal milk containing 70–90 wt. % of casein and 10–30 wt. % of whey proteins in terms of total protein; and (a-ii) ultrafiltration of the animal serum based composition containing 0–25 wt. % of casein and 75–100 wt. % of whey proteins in terms of total protein; or (a-iii) ultrafiltration of mixture of compositions (ai) and (a-ii); (b) combining the UV retentate originating from step (ai) with the UV retentate originating from step (a-ii) to obtain an intermediate product; (c) removing polyvalent ions from the UV-permeate occurring from step (ai) and/or (a-ii) or (a-iii) to obtain at least one relaxed UV-permeate; (d) combining at least one relaxed UV-permeate occurring from step (c) with a UV retentate originating from step (ai) and/or (a-ii) or (a-iii), or (b) , to produce a combined product and (ei) drying the combined product originating from step (d) to obtain a dry milk mixture and/or (e-ii) drying any UV retentate originating from step (ai) and/or (a -ii) or (a-iii), or (b), which is not combined at step (d), and drying any of the softened UV permeates occurring from step (c), which is not combined in step (d), followed by combining dried UV retentate with dried softened UV permeate to produce a dry milk mixture. Milk composition, which is an intermediate product, contains from 40 to 52 wt. % protein, wherein casein and whey are present in weight ratio ranging from 70:30 to 30:70, lactose in amount of 35 to 50 wt. %, as well as in a certain amount of magnesium, calcium, phosphorus, sodium, chloride and potassium. Milk composition, which is a combined product, contains from 16 to 24 wt. % of protein, wherein casein and whey are present in weight ratio ranging from 70:30 and 30:70, lactose from 65 to 80 wt. %, as well as in a certain amount of magnesium, calcium, phosphorus, sodium, chloride and potassium. Also disclosed is a modular system for producing a milk mixture using said method.
EFFECT: invention allows to provide an improved method for preparation of a dry milk mixture increasing the yield of lactose and milk proteins.
