FIELD: dairy industry.
SUBSTANCE: method for preparing a food composition suitable for infant feeding includes: (i) microfiltration (MF) of defatted milk of animals through a membrane, wherein the MF may be augmented by diafiltration (DF); (ii) optionally, reverse osmosis (RO) of MFR originating from step (i) to obtain retentate (OO2P) and permeate (OO2P); (iii) ultrafiltration of the MFP occurring from step (i) through a membrane, having cut-off by molecular weight of not more than 25 kDa and operating with volume concentration factor of 1.5–8, obtaining retentate (UFR) and permeate (PFC); (iv) combining part of MFR, occurring from stage (i), or OO2P, occurring from stage (ii), with one or more additional components, wherein food composition contains not more than 50 wt % of protein from another source. Also described is a food composition produced by said method and a product-base for baby food.
EFFECT: invention enables to obtain products for baby food by an efficient and cheap method, requiring minimum processing steps and providing conditions for maximum use of components in defatted milk of animals.
