FIELD: dairy industry.
SUBSTANCE: method of producing of a baby food product and fermented milk product including: (a) processing of milk to a flow of casein, flow of whey protein and flow of lactose by: (i) filtration of fat free animal milk at the filtration stage through a microfiltration membrane with production of de-bacterized milk as a permeate; (ii) filtration of permeate generated at stage (i) at filtration stage through a microfiltration membrane with generation of a casein flow as retentate and permeate including the whey protein; (iii) fractioning of permeate generated at stage (ii) on the flow of whey protein and the flow of lactose, wherein stage (iii) is done by ultrafiltration; (b) combining a portion of casein flow, whey protein flow generated at stage (a) and the source of lactose to obtain a recombined flow, wherein the flow of lactose includes acid whey; (c) preparation of a product for baby food from recombined flow generated at stage (b); (d) preparation of a fermented milk product from a portion of casein flow generated at stage (a).
EFFECT: efficient utilization of dairy production waste.
