FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to preparation of marinated potato straw. Method for preparation of marinated potato straw involves the stages of potatoes provision, potatoes cutting with straw with cross-section area of 3–25 mm2, heating said potato straw to temperature of 60–140 °C, intensive cooling of heated potato straw for 25 minutes to ambient temperature and keeping intensively cooled potato straw in a liquid marinade with pH from 3 to 4.5 and temperature of 65–95 °C. Invention also relates to a method of determining a batch of potatoes suitable for producing marinated potato straw, and pickled potato straw produced by the disclosed method.
EFFECT: proposed method of pickled marinated potato straw making potato straw as a semi-product for preparation of a crisp fried potato straw tudusi, wherein its taste properties are higher than that of potato straw tudusi, produced from fresh potatoes.
