FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to meat and meat products production. “Lyubimyi Krai” (“Favourite Land”) pate preparation method envisages linseed flour hydration within 2 hours in the ratio of flour and water 1:3, carrots and onions washing, cleaning, cutting and sauteing on sunflower oil, rabbits carcass cutting and deboning, liver washing, meat raw material blanching during 15–20 min, meat stuffing from meat raw material, sauteed vegetables, hydrated flax flour, cow oil, dry milk, melange, salt, sugar and spices, chopping mixture for 15 ± 3 minutes till formation of homogeneous mass, filling with pate mass of shells and clipping of loaves with subsequent cooking in a thermal chamber till temperature inside loaf is 70–72 °C and cooling to 0–6 °C, labelling, packaging and realization.
EFFECT: wider range of pates with high nutritive and biological value.
