SUBSTANCE: invention relates to the meat processing industry and can be used in the production of dietary meat products. Proposed is horse meat pâté made of blanched trimmed horse meat, blanched carrots, sautéed onions, and dairy sauce with added vegetable polysaccharide guarana, spices, at the following ratio of the initial components, wt.%: blanched trimmed horse meat 38 to 52; blanched carrots 6 to 8; sautéed onions 2 to 5; dairy sauce with added guarana 40 to 50; spices the rest.
EFFECT: possibility of expanding the human diet with a functional meat product with high biological and nutritional value, high organoleptic characteristics.
