FIELD: food industry.
SUBSTANCE: invention can be used in production of a functional fish product. The method for producing fish paste includes receiving fish, defrosting, in case of using frozen fish, washing the fish, butchering the fish to isolate the fillet and liver, washing the fish fillet and liver. Next, fish raw materials are blanched in saline solution and subsequently subjected to coarse grinding to a homogeneous mass together with onions and carrots previously sautéed in vegetable oil and blanched rice and semolina. Then the resulting crushed mass is mixed with chicken eggs, salt and spices, and further fine grinding is carried out, the mass is molded into a shell, boiled and cooled. Fish paste is obtained with the following ratio of recipe components (kg/100 kg): silver carp fillet 25.2, paddlefish fillet 27.8, paddlefish liver 20.0, semolina 8.2, boiled rice 8.1, browned onion 2, 6, browned carrots 2.5, chicken egg 5.0, table salt 0.4, ground black pepper 0.1, ground allspice 0.1.
EFFECT: proposed method for obtaining fish paste expands the range of finished products, provides an increase in the yield of finished products per unit of raw materials used, resulting in a product with a balanced composition containing new nutritional raw materials.
