SUBSTANCE: invention relates to the food industry. A method for extracting pectin and dietary fiber from plant waste in the form of dry citrus pomace or dry grape pulp includes hydrolysis-extraction of raw materials, separation of the pulp into liquid and solid phases in the field of centrifugal forces, microfiltration of the liquid phase, concentration of the filtrate on ultrafiltration membranes on a solid support, and subsequent thickening in a vertical double-shell direct-flow vacuum evaporator of circulation-film type and drying. Wherein the raw material is preliminarily crushed to a particle size of no more than 1 mm, mixed with water at a hydromodule of 1:8-10, and hydrolysis-extraction is carried out in a vortex layer apparatus of ferromagnetic particles for 1-3 minutes at an electromagnetic field frequency of 50 Hz. The treated pulp is separated into liquid and solid phases, the liquid phase is subjected to microfiltration to obtain a concentrate and filtrate, pectin is isolated from the filtrate, and the solid phase is washed with water to obtain dietary fiber.

EFFECT: invention is aimed at increasing the yield of pectin and additional extraction of dietary fiber, as well as reducing energy consumption due to the implementation of hydrolysis extraction in the apparatus of the vortex layer of ferromagnetic particles, which makes it possible to reduce the processing time and increase the efficiency of extraction, without the use of acids and alcohols.
