FIELD: food industry.
SUBSTANCE: invention relates to the food industry and is aimed at deep processing of secondary raw materials for sugar beet production. Method for producing beet pectin from pectin substances of beet pulp includes hydrolysis of protopectin, separation of the liquid phase from the resulting mixture, precipitation, purification, drying and pulverization of the resulting pectin. And as a raw material, pectic substances are used, extracted with the help of grinding-sorting process from beet pulp, dried with the use of active ventilation. Enzymatic hydrolysis of protopectin is carried out by the enzyme protopectinase. As a source of protopectinase, freshly squeezed juice of sugar beet roots, reached technological ripeness, is used in an amount of 5–10 % of the weight of pectin raw material. For a more complete extraction of pectin from protopectin, the procedure is repeated several times.
EFFECT: invention makes it possible to obtain pectin from beet pulp in a simple and environmentally safe manner.
