FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used in meat processing and public catering. Disclosed is a method for increasing the storage life of minced meat, in which powder of lichen thalli Cladonia stellaris is added to mince in amount of 1.0–2.0 % of mince weight, obtained by mechanochemical treatment of dried raw material in a ball mill without solvents at rate of 1,200–1,500 rpm for 1–2 minutes.
EFFECT: andinvention allows to increase meat mince storage life, experimental microbiological investigations are used, that addition of mechanically activated reindeer lichen during manufacture of minced meat inhibits development of pathogenic microflora in product that can be actual in conditions of absence of refrigerating plants.
