METHOD OF PRODUCING FOOD FILLER BASED ON REINDEER LICHEN OF GENUS CLADONIA Russian patent published in 2025 - IPC A23L5/00 

FIELD: food industry.

SUBSTANCE: invention relates to products of natural origin with pronounced antioxidant properties and can be used in food industry. Method of producing food filler from Cladonia lichens involves manual processing of dried raw material without participation of solvents. Raw material used is reindeer lichen of the genus Cladonia rangiferina, cladonia stellaris, cladonia arbuscula and birch chaga mushroom. Raw material is cleaned from mechanical impurities, washed, chaga mushroom is manually crushed into pieces with diameter of up to 20 mm, soaked in spring water with temperature of 45 °C in ratio of 1:5 and infused for 7 days to obtain chaga mushroom infusion. Reindeer lichen is poured into the obtained chaga mushroom infusion and maintained during 24 hours. Then reindeer lichen is extracted and dried in a natural way. Dried reindeer lichen is milled manually to particle size of 1 mm.

EFFECT: invention is aimed at expansion of the range of herbal food fillers based on lichen.
