FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Ready-to-eat extruded snack with hemp flour includes grain raw materials, defatted hemp flour and salt at the following initial components ratio, wt. %: grain raw material - 78.5–98, hemp defatted flour - 1–20, salt - 0.1–1.5. Grain stock is selected from wheat flour, rye flour, flour of oatmeal, buckwheat groats, millet groats, rice groats, maize grits or their mixture. Snack is prepared by preparing the mixture of initial components, extruding the obtained mixture in an extruder at an extrusion temperature of 110–190 °C and pressure of 2.5–6 MPa, by cutting extruder strand exfoliated on granules and dried by drying to moisture content of not more than 5 %. Additionally one may include in the extruded mixture composition in amount of 1–10 wt. % powder or a mixture of fruit-and-vegetable raw materials powders the sources of which may be apple, pear, banana, strawberry, raspberry, currant, cherry, pumpkin, tomato, spinach, broccoli and beet.
EFFECT: invention allows to enhance food value of extruded snacks, expand the range of snack products, and also allows to efficiently use defatted flour of hemp - a secondary resource of oil-extracting production.
