FIELD: food industry.
SUBSTANCE: invention relates to food confectionary industry. Proposed sherbet with herbal additives, which contains following ratio of initial components, wt%: sugar sand 13.7; cream 33 % 46.5; cookies 8.6; raisin 6.9; walnut 6.9; white chocolate 17.2; hemp seed 0.1; sumac 0.1. Also disclosed is a method of producing said sherbet, in which 13.7 wt% of sugar sand is melted to produce caramel, adding 46.5 wt% of cream with 33 % fat content, stirring to homogeneous mass, boiled down to reduction of volume 2–2.5 times, adding 17.2 wt% white chocolate, stirring until melting chocolate, pouring with prepared mass a pre-ground filler consisting of 0.1 wt% cannabis seeds, 0.1 wt% sumac, 8.6 wt% cookies, 6.9 wt% walnuts, 6.9 wt% raisins, mass is mixed, poured into molds and placed in a cold place.
EFFECT: invention widens the range of oriental sweets containing herbal additives and has high biological value, high taste and organoleptic properties, while preserving the useful properties of vegetal components.
