FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular, to reduction of pathogenic and/or non-pathogenic organisms quantity in raw meat. Method includes: A) supply of fresh water and antimicrobial composition or an antimicrobial precursor into a mixing device connected to a water flow used in food industry, wherein the mixing device comprises: (1) a first channel comprising at least one inlet and outlet, (2) a second channel comprising a first inlet, a second inlet and at least one outlet channel, in which a first channel is connected to a second channel and passes through a second channel, and (3) a mixing chamber comprising an outlet opening, wherein the second channel is connected to the mixing chamber and wherein the outlet of the first and second channels is in fluid communication with the mixing chamber, wherein fresh water is introduced into the inlet of the first channel of the mixing device, and the antimicrobial composition or precursor of the antimicrobial composition is introduced into one or more inputs of the second channel, B) mixing the antimicrobial composition or precursor of the antimicrobial composition and fresh water in the mixing chamber of the mixing device to form an antimicrobial solution, and C) introducing the antimicrobial solution into the water stream.

EFFECT: simultaneous production and application of antimicrobial solution on raw meat, which effectively reduces the number of pathogens in raw meat, as well as use of recirculation solution.
