FIELD: food industry.
SUBSTANCE: invention relates to the processing of poultry carcasses and animal carcasses in sprayed liquids and water baths. A method for processing raw meat or poultry to reduce a number of bacteria is proposed, in which zones are created within a bath of a cooling unit, containing water, by dosed supply of an alkalinity source and an antimicrobial agent into the water, while zones include at least one alkaline zone, pH of which is higher than the dissociation constant DC of the antimicrobial agent, and at least one antimicrobial zone, pH of which is lower than the dissociation constant DC of the antimicrobial agent; and meat or poultry is immersed in the bath of the cooling unit. A method for processing raw meat or poultry to reduce a number of bacteria is also proposed, in which zones are created during the processing of meat or poultry by dosed supply of an alkalinity source to the first zone of spray nozzles and an antimicrobial source to the second zone of spray nozzles, while the antimicrobial agent is dosed continuously, the alkalinity source is dosed continuously or both; and animal carcasses or poultry carcasses are transported through the first and the second zones.
EFFECT: invention provides for the reduction in microbial contamination of meat and poultry using antimicrobial agents that can deactivate cells of vegetative bacteria in water, helping to avoid contamination.
