FIELD: fishing industry.
SUBSTANCE: method for production of fish glue from commercial fish bones provides for washing of fish bones with cold water at temperature 12 °C at hydromodule 1:6 for 2 hours. Bones are then washed 2-3 times with water at temperature 90 °C, after water draining maceration and demineralization with 9 % acetic acid at pH 2–3 for 36–48 hours at temperature 20 °C with subsequent neutralization with sodium hydroxide to pH 5.5–6.5. Obtained mass is washed with cold water at temperature of 12 °C for 1 hour, after draining the water, the raw material is dried in a convection drier at t 40 °C for 2 hours with subsequent grinding in a hammer crusher. Milled mass is boiled at hydromodule 1:8 for 4–6 hours at temperature 70–75 °C and intense stirring, then obtained adhesive broth is cleaned by filtration through a cellulose mass, purified adhesive broth is dried in a convection drier at t 20 °C.
EFFECT: invention allows to produce fish glue with high organoleptic and physical-and-chemical indices, expand raw material base due to usage of various commercial fish bones.
