FIELD: fishing and fish breeding.
SUBSTANCE: invention relates to fish industry. Method of obtaining fish gelatin, which involves sorting fresh fish scales, washing with 5 % sodium chloride solution at a temperature of 10–20 °C, hydronic module 1:4, for 1 hour. Then the raw material is washed with tap water, allowed to drain, and then maceration and demineralization with an acid solution is carried out, followed by mechanical cleaning of fish scales, extraction with vigorous stirring, the resulting extract is cleaned and de-ashed at a temperature of 50–60 °C with calcium hydroxide at pH 9–10 and formic acid with a concentration of 85 % at pH 3–4, the precipitate is separated from the extract, the purified extract is neutralized with sodium hydroxide to pH 5–7, further dried at a temperature of 30–40 °C for 8–12 hours with intensive air circulation to a moisture content of not more than 16 %, then the fish gelatin is deodorized at a temperature of 100–110 °C for 20–30 minutes.
EFFECT: invention allows to improve the quality characteristics of fish gelatin, namely, to increase the rheological parameters, to reduce mineral substances, to eliminate the specific smell and taste of the finished product.
