FIELD: biotechnology.

SUBSTANCE: present invention relates to biotechnology and to a method for producing fish collagen hydrolysate. Method for producing fish collagen hydrolysate comprises the preparation and analysis of raw materials, wherein commercial fish skins are used as raw materials, enzymatic separation of collagen hydrolysate, obtaining an acid dispersion of collagen hydrolysate, forming a dry form of collagen hydrolysate. Raw materials are prepared by cleaning fish skins, washing them with water, freezing, grinding and mixing. Raw materials are analyzed by monitoring the content of moisture, ash and fat in raw materials, wherein a homogenized product containing not more than 55 % water, no more than 3 % ash, and less than 1 % fat is used. Enzymatic separation of collagen hydrolysate is carried out by washing the prepared homogenized product with water, pouring with a 1–3 % solution of the proteolytic enzyme preparation with water duty of 1:2–1:5, holding for 5 hours. Product is further filtered from impurities and an acidic dispersion is obtained by acidifying the solution with an acetic acid solution to pH 5.5–6.5. Dry form is formed by evaporating water from the filtrate without heating at a temperature above 50 °C.

EFFECT: inventive method for producing fish collagen hydrolysate provides collagen hydrolysate with an average molecular weight less than 15 kDa with a predominant collagen content with an average molecular weight ≤ 7 kDa and parameters: humidity (max,%) – 7.0, ash content (max,%) – 2.0, fats (max,%) – 0.3, pH (10 % solution) – 5.5–6.5, solubility in water – complete, sieving – very fast, enzymatic activity – absence, type of solution – slight turbidity, powder color – ivory, smell and taste – neutral.
