FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to the baking. Product of recyclable bakery waste is made of bakery waste, milk whey, vegetable oil, rye flour or rye flour mixed with buckwheat flour, or rice flour or croup of film with addition of eggs, salt and parsley, dried, with following ratio of initial components, wt%: bread wastes – 50; rye flour – 20; milk whey – 15; eggs – 5; vegetable oil – 5; salt – 3; dried parsley – 2; or bread wastes – 50; rye flour – 20; buckwheat flour, or rice flour, or quinoa – 10; milk whey – 15; eggs – 5; vegetable oil – 5; salt – 3; dry parsley – 2. Invention allows to enhance the product biological value, extend the semi-product storage life, enhance its rheological properties and expand the range.
EFFECT: developed product is suitable for dietary nutrition for people suffering from cardiovascular diseases, intolerance to lactose and casein.
