FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to production of instant products requiring no cooking. Proposed is a composition for instant porridge containing whole-ground buckwheat flour or a mixture of whole-ground buckwheat flour and whole-ground oat flour in ratio of 75:25, or a mixture of whole-ground buckwheat flour and rice flour in ratio of 80:20, or a mixture of whole-ground oat flour and rice flour in ratio of 60:40, as a protein material: deodorised defatted soya flour and chlorella powder, as a vegetable complex: a mixture of linseed flour, wheat or maize bran, fruit powder, and as a flavouring additive: ground cinnamon, with the following content of initial components, wt.%: whole-ground buckwheat flour, or a mixture of whole-ground buckwheat flour and whole-ground oat flour, or a mixture of whole-ground buckwheat flour and rice flour, or a mixture of whole-ground oat flour, and rice flour: 27–50, deodorised defatted soya flour: 18.3–33, linseed flour: 8.3, wheat or maize bran: 8–10, fruit powder: 12.5–22.8, chlorella powder: 2.5, ground cinnamon: 0.1.
EFFECT: invention enables to produce a wide range of products with high nutritive value and organoleptic properties, provides for creation of a composition for instant porridge with fast recovery and enrichment of daily ration with protein and food fibres, with preservation of high quality of the product.
