FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Method for processing milk sweet whey material containing a caseinoGlycoMacroPeptide (cGMP) involves: removing cations from the serum to obtain a material having pH from 1 to 4.5; treatment of said material in a reactor with a fluidised bed at temperature of 10–18 °C and ratio of protein and resin from 0.10 to 0.35 kg/l of resin, where said material contacts the resin so that resin absorbs 10 to 90 % of cGMP, and the protein material is recovered, wherein the treatment is carried out such that resin absorbs 30 to 45 g/l of cGMP contained in sweet milk whey. Method for production of a protein material from sweet milk whey containing cGMP, where said protein material has a given ratio of tryptophan/threonine.
EFFECT: invention enables to remove cGMP to obtain material suitable for hypoallergenic childhood mixtures.
